It’s your neighborhood café, where everyone knows your name, and you’re always welcomed with a bright smile. Where you’ll keep coming back for fresh “home-cooked” meals throughout the day & you will always feel taken care of. We are the community mama, if she were a hippie, that grew veggies in her garden in northern California.
What or who is the inspiration behind your startup?
I grew up in Northern California, home of the “farm to table” movement. The inspiration for Brambles, was a direct result of the food scene in northern California. Fresh, wholesome, food influenced by the beautiful ethnically diverse population you find in San Francisco. Food that not only tastes great, but makes you feel great too!
Who is your hero, the one you aspire to be?
I wouldn’t say I aspire to be anyone, but am massively influenced by many chefs. Anthony Bourdain, for his adventurous spirit, eloquence & respect of all cultures. Yotam Ottolenghi, for his dynamic approach to vegetables and his use of middle eastern flavours in new and exciting ways. Nasim Aikhani, of Sofreh restaurant in Brooklyn, for elevating the Persian Restaurant scene. I could go on for a while…
Why your company the “best thing since sliced bread”
Because we top our sliced bread (and pizza for that matter) with some seriously delicious things, like our Avocado Pizza. And because we love what we do and that energy goes into every single aspect of Brambles. You can feel it from the moment you walk in, the ambience, our team, and the food are all about heart and soul.
What is your favourite dish on the menu and why?
This feels like a trick question. I love so many of the dishes, Avocado Pizza, Chili Fried Eggs & Zaatar Labneh, Vegetarian Moussaka, Sweet Potato & Kale Frittata. But my current favorite is a special dish we just launched, the Shakshuka & Kale Borani Pizza. It may be the best thing I have ever made. Garlic oil brushed pizza dough, topped with a sautéed kale & labneh mix, topped again with our homemade shakshuka, and a chili fried egg to finish. It is a perfect balance of bold flavours, that will knock your socks off!
What lessons have you learned along the way that you would like to share with other FoodPreneurs?
Know who you are, and be genuine to it. Listen to your instincts. Remember to do it all with heart and soul. Stay true to what you stand for, no matter what the trends are. Create the space that your younger self dreamed of. Treat your team with respect and care, they are the backbone of your business. And of course, have fun!!!
