By Chef Piotr Kamieniczny: Our second #BringBackBalance #RetreatNRelax event was held at Al Maha Desert Resort & Spa in the private dining room of Al Diwan. The menu for the day was specially curated and presented by Chef Peter Sebby, Executive Sous Chef of Al Maha. There’s an option for a Healthy Menu at the resort which has evolved as a result of guests’ repeated requests and Chef Piotr Kamieniczny, also Executive Sous Chef at the resort, is involved in its creation as well as the various kitchen experiments that happens at Al Maha. Needless to say, our menu reflected a ‘healthy and indulgent’ note through out starting with the welcome drinks of Avocado, Mangoes and Mint to the show stopper dessert of Sweet Potato and Orange Brownie served with sugar free vanilla ice cream and fresh mixed berries. Avocado & Mango Smoothie, the welcome drink was created for the first time on that day and it became such a favorite that we wanted to share it with our readers. Our Editor Debbie recreated this drink at home and assured us that the recipe is really easy to replicate. The drink when served chilled, is both refreshing and fulfilling and is definitely going to be a perfect coolant to combat the onslaught of the hot summer months. It definitely did for us, specially after the long drive to the desert resort. Last heard, the smoothie has made its way to Al Maha’s regular menu!
- 1 fresh avocado, ripened
- 200 gms fresh mango, ripened
- fresh mint leaves, a bunch
- 100 gms low fat yoghurt
- 100 ml soy milk
- 30 gms honey
- Blend fresh avocado, mango, mint & low fat yoghurt together until it reaches a fine texture.
- Add rest of the ingredients with a few ice cubes and blend well
